These 5 Comfort Foods Just Got a Healthy Makeover & We’re Not Complaining!

If you’re like me (and millions of other people in the world), your New Year’s resolution is to adapt a healthier lifestyle in 2015! With the right combination of diet and exercise, I know this is possible!
However, as a lover of all things food, it can get a bit tricky for me in the kitchen! I am NOT willing to sacrifice flavor just to shed a few calories. BUT, with a little bit of trial and error, I realized exceptional taste doesn’t necessarily have to be surrendered when lightening up a dish!
I have put together 10 of my favorite comfort foods that have all been revamped to help us reach those New Year goals! Best part is, you won’t even be able to taste the difference!
1. Three Cheese Macaroni
I substituted regular pasta shells with whole wheat and added in 1 full head of cauliflower to up the nutritional value…and guess what…my kids ate the entire darn thing!
2. Shepherd’s Pie
Cauliflower strikes again in this clever recipe! As somewhat of a mashed potato snob, I was a bit hesitant on using cauliflower to spruce up the potato section of the Shepherd’s Pie. But when I tasted the end product, I was pleasantly surprised!
3. “Fried” Chicken
Sooo…technically this chicken isn’t fried because, let’s face it, you can’t really call something healthy if you deep fry it. BUT, the end result of this baked chicken recipe is crispy and delicious enough that you won’t even miss it’s saturated fat-ridden counterpart!
4. French Toast
French toast is, and always will be, my favorite breakfast dish. I’m not going to lie, nothing can beat a rich, decadent, sinfully decorated plate covered in thick toasted bread, drenched in melting syrup. However, this healthier recipe comes pretty darn close!
5. Chocolate Cupcakes
These cupcakes are made with black beans and avocados…but don’t let that you fool you…they still taste sinfully delicious!
