The Best Summer Dessert Recipes to Keep Cool


Summer can be hot, really hot. No one wants to be in a warm kitchen with the oven running on a hot day. It’s uncomfortable and not to mention, more expensive to keep your house cool when the oven is on. So nix the oven and beat that heat with these five quick tasty recipes.

Strawberry Floats

  • Half gallon of strawberry ice cream
  • Bottle of ginger ale

Instructions
  1. Put two scoops of ice cream in a small glass
  2. Pour as much ginger ale over the ice cream as possible

 

Easiest Key Lime Pie

  • 2 graham cracker pie crusts
  • 2 cans of sweetened condensed milk
  • 12 ounce can of limeade concentrate
  • 16 ounces of cool whip
  • Key limes, optional

Instructions
  1. Put all ingredients in a large mixing bowl
  2. Combine with an electric mixer until blended and smooth
  3. Pour equal amounts into the two crusts and refrigerate until set
  4. Garnish with slices of key limes if desired

 

Less Mess Watermelon

  • 1 watermelon
  • Popsicle Molds

Instructions
  1. Blend chunks of ripe watermelon until smooth
  2. Pour into popsicle molds
  3. Insert sticks and freeze

 

S’mores Brownies

  • 1 box of brownie mix (13×9 pan size)
  • Oil
  • Water
  • Egg
  • 1 bag of marshmallows
  • 1 pack of graham crackers

Instructions
  1. Prepare brownies according to package directions
  2. Grease pan with cooking spray
  3. Break graham crackers into enough squares to cover pan bottom
  4. Pour and evenly spread prepared brownie mix over the graham crackers
  5. Bake according to brownie package directions
  6. Top with marshmallows and continue to bake until marshmallows are golden brown
  7. Cool 10 minutes
  8. Cut into squares

Insiders Tip- If you want this recipe to be even cooler, top it with a scoop of vanilla ice cream or serve with a cold glass of milk.

 

Home Made Ice Cream

  • 3 large eggs
  • 12 ounce can of evaporated milk
  • 3 cups of granulated sugar
  • 2 teaspoons of vanilla flavoring
  • 6-7 large, very ripe bananas (other fruit in the same volume can substitute)
  • Whole milk
  • 1 bag of ice, small pieces
  • Ice cream salt
  • Electric or hand crank ice cream freezer

Instructions
  1. Mix the first five ingredients well with a mixer
  2. Pour into the freezer can
  3. Add milk until it reaches the fill lines
  4. Insert paddle and freeze according to freezer directions
  5. Layer 2-3 inches of ice with 1/3 cup of ice cream salt

Summer is the perfect time for family get-togethers and memory making. These recipes are simple, stress free, time freeing and overall inexpensive. They have lasted for generations and still live on in my family. I hope they will do the same in yours!
